Gramona and the world of Cava

Since 1881, the Gramona family has farmed vineyards in Sant Sadurní d'Anoia, in the heart of Penedès, Catalonia. Six generations later, the house is a byword for long-aged sparkling wine: Xarel·lo as its backbone, Demeter-certified biodynamic vineyards, and wines that rest for years on their lees before reaching the glass, such as the celebrated III Lustros.

In 2019, Gramona was among the producers that left the Cava D.O. to found Corpinnat, a seal with stricter rules: organic grapes, hand harvesting, vinification entirely at the estate and a minimum of 18 months of ageing.

In this escoLITA, Linda Díaz of Gramona and sommelier Danyel Steinle lead a class on the world of Catalan sparkling wine: the traditional method, the grapes of Penedès, time as an ingredient, and what sets a Cava apart from a Corpinnat. After the class, the evening continues at the table with a 6-course tasting menu paired with the wines presented.
